Preparation and Cooking
Slice tofu into ½ inch-thick pieces and pad them dry. Roll the dried tofu in
flour (#2) to cover them thinly. Dip the floured tofu into a bowl of
beaten egg (#4). Heat up a frying pan, then pour about 2 tablespoon of cooking
oil (#8) into the hot pan. Place the pieces of tofu (floured and egg-dipped)
into the frying pan, fry until golden, turn them over to cook both sides. Stir
ingredients in #6 and #7 and pour into the frying pan with the tofu, cook at low
to medium heat, use a fork to punch the tofu to let the soup soak into them.
Cook until the soup is almost gone, dish the tofu out to a plate. Sprinkle
green onions (#3) and ginger (#5) on the top of the tofu. If you would like,
you can sprinkle a teaspoon of cooking wine.
